Lion's Mane Protein Bars

These Lion's Mane protein bars are perfect as a healthy snack with added cognitive benefits from Lion's Mane mushrooms. They are both nutritious, filling and coated in delicious dark chocolate — ideal for taking on the go or as a quick snack.

Procedure:

1. Prepare the dry ingredients:

• Mix oatmeal, chopped nuts and Lion's Mane powder in a large bowl. Make sure the ingredients are well mixed.

2. Make the Peanut Butter Mix:

• In a small saucepan, melt peanut butter, honey and coconut oil over low heat. Stir constantly until the mixture is smooth and liquid. Add the vanilla extract and remove the pan from the heat.

3. Assemble the bars:

• Pour the peanut butter mixture over the dry ingredients in the bowl. Stir it all together well so that it becomes an even mass.

• Press the mixture into a square shape lined with baking paper. Make sure the surface is even and pressed together well. Put the mold in the refrigerator for at least 1 hour so that the mass can solidify.

4. Coating with chocolate:

• When the mass has solidified, melt the dark chocolate over a water bath or in the microwave. Cut out the cooled bars into desired sizes and coat them with the melted chocolate. You can also dip half of each bar in chocolate for a nice finish.

5. Cooling:

• Let the chocolate harden by putting the bars back in the fridge for another 15-20 minutes.

6. Serving:

• Once the chocolate has set, the bars are ready to be served! Store them in an airtight container in the refrigerator, where they can stay fresh for up to a week.

• 100 g of oatmeal

• 50 g chopped nuts (eg almonds or walnuts)

• 2 tablespoons Lion's Mane powder

• 50 g peanut butter (or almond butter for variation)

• 3 tablespoons honey or maple syrup (adjust according to how sweet you want them)

• 1 teaspoon vanilla extract

• 2 tablespoons coconut oil

• 100 g dark chocolate (min. 70% cocoa), melted to coat

For this you will need:

• Small pot

• Bowl to mix the ingredients

• Square shape (about 20x20 cm)

• Baking paper

• Knife to cut the bars
