About me and Lions Gourmet



A few years ago, my life changed when I was diagnosed with cancer. This experience gave me a new perspective on what really matters. I found that it's not money or material things that create happiness, but closer relationships, passion and those little moments when you really feel alive. For me, cooking became a way to unite these elements -- a way to bring people together, create joy and experience life with all the senses.

After my cancer, my girlfriend and I decided to move to Møn — a choice that has led me closer to the authentic and a more down-to-earth approach to life. Here at Møn it is very limited when it comes to picking up take-away, and this has made me embrace the art of cooking from scratch with ingredients grown locally, and sometimes in my own garden. Getting my hands in the ground and growing my own vegetables and mushrooms has become a source of joy and a way to create something from scratch that both nourishes the body and soul.

My fascination with mushrooms, started with especially Lion's Mane (hedgehog mushroom), began to take off after the course of cancer. I discovered the incredible properties that these unique mushrooms have to offer. Known for its healing properties, Lion's Mane has been shown to be able to support brain health by promoting nerve growth and improving cognitive functions. In addition, there is research that points to the fact that Lion's Mane can strengthen the immune system, reduce inflammation and even have anti-cancer properties. It's pure magic in my optics -- and something I want to share with others.
My name is Jonas Rosbech and I have spent a large part of my life navigating the creative landscape of marketing, media and startups. I graduated from DMJX in media production and management and have had the pleasure of working with many inspiring people in the industry. After my time at a marketing agency in Copenhagen, I started my own digital agency and then went on to co-found exciting projects like GamerzClass and Cathedral Studios. Today I still work with startups and create new projects that connect people and ideas across creative fields.

Mushrooms on the whole are a great source of nutrition and flavor. They are not only incredibly versatile in the kitchen, but also have a number of health benefits that I think many are only just starting to get their eyes on. From the earthy taste of portobello to the delicate texture of shiitake and the meaty feel of oyster hats — each type of mushroom has its own unique character and beneficial properties. I believe that we are only just beginning to discover their full potential.
