Shiitake “Bacon”

Healthier than traditional bacon, but with lots of umami and crispness. This shiitake “bacon” is perfect as a topping for salads, sandwiches or as a snack in its own right.

Procedure:

  1. Prepare the mushrooms:
    Preheat the oven to 180°C. Clean the shiitake mushrooms with a brush and cut them into thin slices. It is important to avoid washing them under water, as it can make them soft.
  2. Make the marinade:
    In a bowl, mix olive oil, soy sauce, maple syrup, smoked paprika, salt and pepper. Stir well until everything is mixed.
  3. Marinate the mushrooms:
    Put the sliced shiitake mushrooms in the marinade and let them steep for 5 minutes while turning them so that they are covered evenly.
  4. Baking:
    Spread the shiitake slices evenly on a baking sheet lined with baking paper. Bake them in the oven for about 15-20 minutes until crisp and golden. Keep an eye out for them as they can get too dark quickly.
  5. Cool and serve:
    Let the shiitake “bacon” cool for a few minutes so that they become even crispier. Serve as a topping on salads, in sandwiches or as a delicious snack.

  • 200 g shiitake mushrooms (cleaned and cut into thin slices)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon maple syrup or agave syrup
  • ½ teaspoon smoked paprika (can be omitted for a milder flavor)
  • Salt and pepper to taste
