Procedure:
Prepare the Lion's Mane mushrooms:
Tear the Lion's Mane mushrooms into strips with your hands. The natural fibers of the mushroom create a stringy structure similar to pulled pork. The finer you tear them, the more “pulled” they will be.
Fry the mushrooms:
Heat a large frying pan over medium heat and add olive oil. Toss in the onion and garlic and fry until soft and starting to take on a little color, about 3-4 minutes.
Add the grated Lion's Mane mushrooms to the pan and continue to fry for 5-7 minutes. The mushrooms should turn golden and crispy at the edges.
Spices and flavors:
Sprinkle smoked paprika and cumin over the mushrooms and stir. Let the spices release their aromas for a minute. Add the soy sauce and apple cider vinegar for a deeper flavor, and let it boil in for a few minutes.
Add BBQ sauce:
Pour the BBQ sauce over the mushrooms and stir well so that all the mushrooms are covered. Simmer for 5 minutes until the sauce is well reduced and the mushrooms are tender and juicy.
Heat the burger buns:
While the mushrooms are simmering, you can heat the burger buns in the oven at 180°C for 5 minutes, or until lightly toasted and crispy on the outside.
Assemble the burgers:
Place a lettuce leaf on the bottom of each bun. Spread the “pulled” Lion's Mane mushrooms on top and place a slice of cucumber and a tablespoon of coleslaw on top. Finish with extra BBQ sauce to taste and top of the bun.
Serve and enjoy:
