Vegetarian Bolognese with Mushrooms

A lovely flavorful vegetarian bolognese made with mushrooms and simple ingredients. Perfect for a meat-free evening.

Procedure:

  1. Cook the pasta: Put a pot of salted water on to boil. Cook the spaghetti according to the instructions on the package.
  2. Sauté the vegetables: Heat olive oil in a large pan or saucepan. Add finely chopped onion and garlic, and sauté over medium heat until soft and golden, about 5 minutes.
  3. Add mushrooms and carrots: Add grated carrots and finely chopped mushrooms and continue to fry for 5-7 minutes, until the mushrooms give off liquid and turn golden.
  4. Make the sauce: Add tomato paste and stir it into the vegetables. Pour chopped tomatoes and vegetable broth into the pan and add oregano and basil. Let it all simmer for 15-20 minutes until the sauce thickens.
  5. Taste for seasoning: Season with salt and pepper and adjust the seasoning as needed.
  6. Serving: Spread the cooked spaghetti on plates, and top with the flavorful bolognese. Sprinkle with freshly grated Parmesan and enjoy a delicious vegetarian bolognese.
