Grilled Lion's Mane Sandwich with BBQ Sauce

This flavorful sandwich is filled with juicy, grilled Lion's Mane mushrooms glazed in BBQ sauce and served in a soft sandwich bread with crispy coleslaw. A perfect, easy dinner or lunch. ‍

Procedure:

  1. Prepare the Lion's Mane mushrooms:
    • Clean the Lion's Mane mushrooms gently by wiping them with a damp cloth. Cut them into large chunks or leave them whole if they are not too large. Sprinkle them with a little salt and pepper.
  2. Grill the mushrooms:
    • Heat the olive oil in a skillet or grill pan over medium heat. Place the Lion's Mane mushrooms on the pan and fry them for 4-5 minutes on each side until golden and tender - you can advantageously here use a palette knife or spatula to make them a little flatter. Using a brush, smear the BBQ sauce during frying so that the mushrooms caramelize and get a delicious glaze.
  3. Prepare the sandwich bread:
    • Slice the sandwich loaves and lightly toast them on the pan or in the oven until crispy on the outside.
  4. Assemble the sandwich:
    • Spread the BBQ-glazed Lion's Mane mushrooms into the sandwich loaves. Add layers of coleslaw, pickled red onions, avocado, grilled red peppers, jalapeños and spinach leaves. Place the top of the bread on and serve immediately.

  • 200-250 g Lion's Mane mushrooms
  • 4 tablespoons BBQ sauce (your favorite)
  • 2 sandwich loaves (eg ciabatta or baguette)
  • 100 g coleslaw (homemade or purchased)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 red onion, pickled (optional)
  • 1 avocado, sliced
  • 1 red pepper, grilled and sliced
  • Jalapeños or chili (optional)
  • Fresh spinach leaves or arugula
