Lion's Mane Tea

Lion's Mane tea is super easy to make, and so it's perfect if you want a little focus and clarity into the day. It is a mild and calm drink, which is not heavy on calories, but in turn is packed with beneficial properties for the brain.

Procedure:

1. Boil the water:

• Pour the water into a small saucepan and bring to a boil over medium heat.

2. Add the Lion's Mane mushrooms:

• When the water boils, add the dried (or fresh) Lion's Mane mushrooms. If using fresh Lion's Mane, cut the mushroom into small pieces so that the flavor draws out more easily into the water.

3. Simmer:

• Turn down the heat and simmer the mushrooms for 15-20 minutes. If you want a little extra heat, you can add freshly grated ginger at this point.

4. Strain the tea:

• When the simmering time is over, strain the tea to remove the mushrooms and any other ingredients. Pour the tea into cups.

5. Sweet and taste for:

• Add a teaspoon of honey or more to taste. You can also add a splash of lemon juice for extra freshness.

Serving:

Serve Lion's Mane tea hot and enjoy it as a soothing, healthy drink, perfect to start the day or as a relaxing drink in the evening. The tea has a mild and slightly earthy taste, and the combination of honey and lemon provides a pleasant balance.

If you want a stronger flavor, you can let the mushrooms simmer longer — up to 30 minutes. Dried mushrooms often provide a more intense flavor, while fresh mushrooms have a gentler flavor profile.
