Maitake Pie with Thyme and Garlic

This pie is filled with juicy maitake mushrooms, garlic, and thyme in a crispy puff pastry base. It is creamy and flavorful, perfect as a lunch dish or light dinner, served with a fresh green salad.

1. Prepare the pie base:

• Preheat the oven to 180°C. Roll out the puff pastry and place in a greased pie pan. Prick the bottom with a fork and brush with a little beaten egg. Pre-bake the bottom for 10 minutes until lightly golden.

2. Fry the maitake mushrooms:

• In a frying pan, melt the butter over medium heat. Add the grated maitake mushrooms, garlic and thyme. Fry until the mushrooms are golden and have given off most of their liquid, about 5-7 minutes. Then season with salt and pepper.

3. Make the egg mixture:

• In a bowl, beat the eggs together with cream, grated cheese, a little nutmeg, salt and pepper. Add the fried mushrooms to the egg mixture and stir well.

4. Fill the pie:

• Pour the mushroom and egg mixture into the pre-baked pie base. Spread the filling evenly and bake the pie for 30-35 minutes, or until the egg mixture has set and the top is slightly golden.

5. Serving:

• Let the pie rest for a few minutes before cutting it out. Serve it with a fresh green salad and possibly a homemade vinaigrette, yum!

Type:

If you want to make the pie extra delicious, you can add a little grated Parmesan to the egg mixture or sprinkle a little on top. So you can also easily make this dish with other mushrooms such as shiitake or oyster hats if you don't have maitake on hand.

• 1 packet of puff pastry (or make your own pie base)

• 1 egg for brushing

For the filling:

• 250 g fresh maitake mushrooms (grated into bite-sized pieces)

• 2 cloves garlic, finely chopped

• 2 tablespoons butter or olive oil

• 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

• 3 eggs

• 2 dl cream (or oat cream for a plant-based version)

• 100 g grated cheese (eg gruyere or cheddar)

• Salt and freshly ground pepper to taste

• A little nutmeg

For serving:

• Fresh green salad with vinaigrette
